Dominio del Soto
Dominio del Soto is an organic winery founded in 2005 in Sotillo de la Ribera, in the province of Burgos, in the heart of Ribera del Duero. Spanish wines have always been in Michel Chapoutier's heart, and with his daughter Mathilde Chapoutier, the project took off after the family discovered organically managed vineyards in the Ribera region. Mathilde's faith in the potential of the terroir of the area made Chapoutier invest in the area and after a few years of working in the vineyard, the first wines of the farm were released.
The farm's nurseries cover a total of 16 hectares, 850-900 meters above sea level. The soil is mainly deep limestone clay and some plots also have sand. In the area dominated by Mediterranean and continental climates, winters are very cold and summers are hot and dry. The temperature fluctuations between day and night are considerable, which is reflected in the wines' intensely concentrated taste world and noticeable acidity. The farm's nurseries are currently being converted to biodynamic production.
Dominio del Soto's winemaking is traditional for the region. The grapes are picked by hand in 20 kilo boxes and used in steel and cement tanks. After fermentation, the wines mature for a long time in the cellars before release. The estate produces two different red wines and one white wine. The producer has an organic certificate.
