The producer's new cuvée from the Côte de Sezannais.

Terroir, production method and maturation: The grapes are collected by hand from the Sezannais area. The base wine is vintage 2021. The base wine ferments and matures on its lees in oak barrels for 8 months, and is not clarified or filtered. Malolactic fermentation is also allowed. The wine was bottled for the second fermentation in May 2022. After barely two years of lees maturation, the wine was recorked in early 2024 and a 3 g/l dosage was added.

Usage: Elegant as an aperitif.

Description: The scent is mildly appley, citrusy and nutty. The dry taste is pleasantly mousse-like, apple-like and noticeably acidic.

The Dhondt-Grellet champagne estate began in the village of Flavigny near Avize in 1986, when the Belgian-born Éric Dhondt and his Champagne wife Édith Grellet decided to stop selling their grapes to champagne houses and started making wines that express the terroir of the northern Côte des Blancs themselves. The couple's son Adrien, born in 1991, who has been involved in the operation of the farm since 2012, continues to take care of the family's orchards and make wines.
