A distinctive Blanc de Blancs from the village of Cuis.

Terroir, production method and maturation: The grapes are collected from two premier cru plots of Les Nogers in the village of Cuis. Les Nogers is practically a continuation of Le Bateau in Cramant, on the other side of the border between the villages. The soil of the plots consists of clay and limestone. The average age of the ropes is 50 years. The basic wine ferments spontaneously and matures on the lees in oak barrels for 8 months, and is not clarified or filtered. Malolactic fermentation is also allowed. After the second fermentation, the wine matures for 5 years on the lees. When recorking, a dosage of 2-3 g/l is added to the wine.

Use: Crème Nino's goat cheese mousse.

Description: The fragrance is multidimensionally layered, toasty, and slightly caramel. The dry taste is very precise, the mousse is refined and the whole is rich, but elegant.

The Dhondt-Grellet champagne estate began in the village of Flavigny near Avize in 1986, when the Belgian-born Éric Dhondt and his Champagne wife Édith Grellet decided to stop selling their grapes to champagne houses and started making wines that express the terroir of the northern Côte des Blancs themselves. The couple's son Adrien, born in 1991, who has been involved in the operation of the farm since 2012, continues to take care of the family's orchards and make wines.
