A nebbiolo that resists the follies of bureaucracy, which was first born in 2009, when half of the same batch of 2005 Barolo was excluded from the appellation.

Terroir, method of production and maturation: The grapes used for the wine come from the calcareous clay slopes of the Barolo village area to the southeast, south and southwest. Manual harvesting and precise selection of grapes. The wine ferments spontaneously in cement tanks using methods at a temperature of 22-28°C for about 2 weeks, followed by a 15-day maceration. After pressing, the wine matures for a couple of years in large Slanovian oak barrels, after which it is allowed to settle for a while in cement tanks.

Use: As a partner for game dishes and autumn flavors.

Description: A slightly restrained and reductive aroma, with typical Nebbiolo perfume and red fruitiness. The dry and spicy taste is enhanced by velvety drying tannins, and the taste continues layered for a long time.
