A broad and mineral white wine.

Terroir, production method and ripening: The grapes are collected from vines that are on average 80 years old, which grow in the low-lying orchards of the island of Santorini. The wine ages in temperature-controlled steel tanks, where it matures on the lees for 7 months. The lees are mixed abundantly during maturation.

Use: As a companion to stewed octopus.

Description: Rich aroma with creaminess brought by lees maturation. The dry taste is broad and rich, the taste is slightly salty, and the acidity brings liveliness to the wine.
