Top vintage wine from the Grand Cru village of Cramant.

Terroir, production method and maturation: The grapes are collected from the best plot in the village of Cramant, Le Bateau. The nursery was planted in 1951 . The basic wine matures on the lees in oak barrels for 8 months, and is not clarified or filtered. Malolactic fermentation is also allowed. The wine was bottled for a second fermentation in May 2017. After a long lees maturation, a 2 g/l dosage was added to it during recorking.

Use: With sole meunière and truffle fries.

Description: The scent is multidimensional, intense and powerful, and you can sense citrus as well as light smoke and nuts. The chalky but rich taste is very dry and the long, layered aftertaste leaves a mark.

The Dhondt-Grellet champagne estate began in the village of Flavigny near Avize in 1986, when the Belgian-born Éric Dhondt and his Champagne wife Édith Grellet decided to stop selling their grapes to champagne houses and started making wines that express the terroir of the northern Côte des Blancs themselves. The couple's son Adrien, born in 1991, who has been involved in the operation of the farm since 2012, continues to take care of the family's orchards and make wines.
