Solessence is the farm's signature champagne, which comes from seven different vineyards.

Terroir, production method and maturation: The grapes come from the villages of Pierry, Moussy, Épernay, Madeuil, Dizy, Boursault and Vertus. The soil is mainly shale clay on a calcareous subsoil. The wine is 50% vintage 2020, which matures in steel tanks, oak barrels of different sizes, egg-shaped concrete containers and sandstone amphoras for 10 months. The wine is not clarified or filtered. Before bottling, 50% reserve wine stored in solera form since 2000 in steel tanks and oak barrels is added to the wine. The whole is allowed to go through a second fermentation and mature for 24 months in cool cellars under a crown cap. Dosage 2 g/l.

Usage: Delicious as an aperitif, but also a good partner with various appetizers.

Description: The scent is appley and slightly toasty. The taste is very dry, but approachably rich. The high acidity supports the wine's rich taste world for a long time.

When you head south from Épernay, you'll find the village of Pierry in a 10-minute drive. This Premier Cru-level area, overshadowed by many more famous villages, is located in the very southeastern part of the Vallée de la Marne in Coteaux Sud d'Épernay, where, going east, it meets Coteaux de Suis in the Côte de Blancs region.
