Chardonnay from a plot belonging to one of the coolest orchards in Burgundy.

Terroir, production method and maturation: The grapes are collected by hand from a steep and cool vineyard located at an altitude of 400-450 meters. The soil of the shelter is limestone and clay and the shelter faces south. The average age of the ropes is over 20 years. The wine ferments spontaneously in 350-liter oak barrels, where it also matures for 14 months. 10% of the barrels are new. The wine is bottled without clarification and filtering.

Use: As a companion to various crustaceans.

Description: A restrained scent with citrus and a little creaminess. The dry taste is supported by lively acidity and is precise.
