The crown jewel of the Pegasus series, Amarone, which melts every wine lover and doesn't make too big a dent in the wallet.
Terroir, production method and maturation: The grapes used for Amarone are obtained from about 20-year-old vines that grow in the Pergola Veronese style on limestone soil. About 30% of the grapes on the vines are selected, after which they are allowed to dry naturally and slowly for 100-120 days. The wine ages in steel tanks and matures in French and American 225-liter oak barrels used for the first and second time for 36 months.
Use: As a companion to hard cheeses or spicy meat dishes, and for meditation.
Description: The deep and multidimensional scent has a mixture of jammy fruit, cloves and leather. The taste is rich and concentrated with tannins and acidity balancing the abundant fruitiness.
