A wine from the village of Savigny-lès-Beaune produced by nearly 50-year-old vines.

Terroir, production method and maturation: The grapes used for the wine are harvested by hand from a 0.57-hectare vineyard planted in 1971, the soil of which is calcareous clay. 20% of the grapes go with the stems and the alcoholic fermentation is allowed to take place spontaneously in open oak vats while the maceration lasts 15-20 days. The grapes are compressed pneumatically, separating the free-flowing grape juice from the pressed juice. The wine matures for 18 months in old oak barrels and after blending for a few months in tanks. The wine is not clarified or filtered.

Use: With grilled tuna and salad seasoned with seaweed.

Description: An aromatic scent filled with dark fruits and forest strawberry. Medium-bodied taste with a hint of raspberry. The tannin structure is elegantly flexible and the wine is very balanced.

The name David Croix should not be unfamiliar to any lover of Burgundy. He is especially known as Camille Giroud's long-term (2002-2016) winemaker, who also worked at Domaine Roulot in Meursault in 2017 together with Jean-Marc Roulot.
