Delicate and sweet Riesling Auslese.

Terroir, production method and maturation: The grapes are collected from the Himmelreich plot in the village of Graach. After light crushing, the pressing lasts for 6-8 hours. The juice is allowed to settle in tanks overnight without enzymes, after which the wine is decanted and fermentation begins spontaneously. The wine is allowed to ferment in steel tanks until spring, and the fermentation is stopped at the desired level of sweetness by cooling the tanks and adding sulfur dioxide to the wine. At the end of fermentation, the wine is separated from its lees and allowed to rest for a few more months before bottling. Residual sugar 85.7 g/l, acids 6.5 g/l.

Use: Apricot as a companion to clafoutis.

Description: The aromatic scent is delightfully fresh and ripe peachy. Despite its sweetness, the taste is lively and elegant, and the aftertaste is balanced by a cheerful acidity.

However, the story of the Prüm family in the area goes back as far as 400 years, and the family is known to have cultivated wine since the 14th century.
