Albarino obtained from old vines in an area covering 0.3 hectares.

Terroir, method of production and maturation: The vines are located at an altitude of 50 meters on poor granite and sandy soil on two south-facing plots protected by a granite wall in the Sisán-Ribadum area. The plots covering 0.3 hectares were planted in 1950 and the vines are ungrafted. No chemicals are used in the shelters and they are partly managed with biodynamic methods. The grapes are picked by hand, the stems are separated, and the grapes are pressed gently. The wine ferments spontaneously in steel tanks and malolactic fermentation is not allowed. The wine first matures on all lees for 3 months and then on fine lees for 6 months without bâtonnage.

Use: With seafood paella or pesto-glazed razor clams.

Description: Fresh scent with apple and citrus fruits. Dry mouthfeel dominated by rich acidity. A sophisticated and long wine that rewards its ripener.

Zarate

Active in the village of Meaño, in the Salnés valley, Zarate is known as a pioneer producer of Albariño. The farm, which can be traced back to 1707, revolutionized the production of Rías Baixas' most important grape in the 1950s by introducing winemaking methods that are still used today.
