Terroir, production method and maturation: The average age of organically cultivated vines used for wine is 25-28 years, although the oldest vines are up to 50 years old. Thus, the yield amounts are around 8-9000 kg/ha, although DO Cava allows up to 12,000 kg/ha. Animal fertilizers are used in animal shelters, which are mixed with straw. The basic wine ferments in steel tanks and after the second fermentation the wine matures on the lees for 24 months, dosage 6 g/l.
Use: As is, for stir-frying and with various appetizers.
Description: The fresh and fruity scent has a typical apple flavor. The dry taste is multidimensional, balanced and fruity soft. Lively, elegant and long-lasting bubbles.
