Blended wine from late ripening plots.

Terroir, production method and maturation: The grapes are harvested by hand from four different plots on the upper slopes of Saint Aubin. The plots were planted between 1990 and 2008. The bunches are sorted and pressed whole. The juice is allowed to settle for a day, after which the wine is decanted by gravity into 600-liter barrels. After alcoholic fermentation, the wine undergoes malolactic fermentation and matures in barrels for 12 months.

Usage: As a partner for lake fish and lemon cream sauce.

Description: The scent is youthful and citrusy. The dry taste is dense and, with lees maturation, broad. Perceptible acidity carries the wine's aftertaste for a long time.

Hubert Lamy

Domaine Hubert Lamy

The family of Olivier Lamy, one of the undisputed stars of the Côte de Beaune, has cultivated wine in the region since 1640. Named after his father Hubert Lamy, the winery founded in 1973 was initially 8 hectares in size, with orchards located mainly within the boundaries of regional appellations.
