Pinot Noir from the southern parts of Beaune.

Terroir, production method and maturation: The grapes used for the wine are collected by hand From the bottom of the slope in the southern part of the town of Beaune. The vines of the 0.36 hectare garden are 85 years old and the topsoil is clay on top of limestone. The wine ferments spontaneously in open oak barrels. The grapes are compressed pneumatically, separating the free-flowing grape juice from the pressed juice. The wine matures for 16 months in oak barrels, 15% of which are new.

Use: As a companion to reindeer sirloin and cherry sauce.

Description: A dense and still slightly shy scent. The taste is concentrated and the tannins are felt, which promises the wine a long aging potential.

The name David Croix should not be unfamiliar to any lover of Burgundy. He is especially known as Camille Giroud's long-term (2002-2016) winemaker, who also worked at Domaine Roulot in Meursault in 2017 together with Jean-Marc Roulot.
