A carefully allocated wine from a very famous producer.

Terroir, production method and maturation: The grapes are collected by hand from a densely planted plot of 1.75 hectares in the northern part of the Grand Cru -vineyard, also being the highest part of the vineyard. The plot has been rented by Lamy family for almost 60 years until in 2014 Olivier managed to buy it. The vines are planted at a density of 24 000 per hectare. The oldest vines have been planted in 1975 and the new plants have been planted between them. The bunches are sorted and pressed as whole. The juice is allowed to settle for a day, after which the wine is decanted by gravity into 300-600 liter barrels. After alcoholic fermentation, the wine undergoes malolactic fermentation and matures in barrels for 12 months.

Use: With a lobster bisque.

Description: The scent has ripe stone fruit and smokiness. The dry taste is very acidic, intense and a little broad with lees maturation. Long aftertaste.

The family of Olivier Lamy, one of the undisputed stars of the Côte de Beaune, has cultivated wine in the region since 1640. Named after his father Hubert Lamy, the winery founded in 1973 was initially 8 hectares in size, with orchards located mainly within the boundaries of regional appellations.
