Four parcels of Pinot Noir from the city of Beaune.

Terroir, method of production and maturation: The grapes used for the wine are harvested by hand from four plots covering a total area of 1.16 hectares and located on calcareous clay and sandy soils in the town of Beaune. The plots are Blanches Fleurs, Blanchisserie, Les Teurons (Premier Cru) and Pointes de Tuvilain. 15% of the grapes are fermented with the stems and the alcoholic fermentation is allowed to take place spontaneously in open oak vats while the maceration lasts 15-20 days. The grapes are compressed pneumatically, separating the free-flowing grape juice from the pressed juice. The wine matures for 15 months in old oak barrels and after blending for a few months in tanks. The wine is not clarified or filtered.

Usage: With goose rolls and rustic baguette or mushroom pie.

Description: The expressive scent has plenty of forest strawberry and harsh spiciness. The taste is medium-bodied and very juicy. The mouth-pleasing tannins and fresh acidity of the wine make it extremely pleasant to drink already young, although the wine also matures beautifully.

The name David Croix should not be unfamiliar to any lover of Burgundy. He is especially known as Camille Giroud's long-term (2002-2016) winemaker, who also worked at Domaine Roulot in Meursault in 2017 together with Jean-Marc Roulot.
